Taylor Erkkinen, co-owner of the Brooklyn Kitchen, shows how to properly hone a knife Hold a butcher steel vertically. Place it on a towel on a flat surface in order to anchor and hold it in place. Most knifes are sharpened to 20 degrees. To find this angle, hold the knife perpendicularly to the butcher steel--this is 90 degrees. Reducing to half that angle is 45 degrees, and half of that angle is 22 degrees.
