Many points have to be considered while sharpening a knife, a knife needs to sharpened from the tip to the bottom, that is from the tip to the portion near the handle. Many of us are concerned about the middle part of the knife and will sharpen only the middle portion making a sweep back shape on the sharpening stone. While sharpening the knife using the stone, the angle at which the knife is sharpened is very important, normally it is 22 degrees, before starting to sharpen the knife add oil evenly on the stone, and for safety reasons always we need to use both the hands, hold the knife with one hand on the handle of the knife and the thumb of that hand should be on the knife, and use the fingers of the other hand namely the index finger and the thumb to push the knife down, start sharpening the knife from bottom to the tip and from corner to corner, what ever we do on side of the knife repeat the something on the other side of the knife. Make sure that we sharp the knife on one side at a time, don't sharp both the sides simultaneously at a time, first finish one side then go for the other side, once this is done wipe the knife to remove the particles on the knife, then we need to season the knife using homing steel, hold the homing steel stone with the holder then move the knife at the same angle over this stone from the bottom to the tip, don't move the knife up and down over this stone. This process will evenly sharpen your knife from the tip to the bottom.
